Strawberry Kate's Playground

Brit trip - Pomme de Reinette & dappy

fruits every day ? I say yes. And with a little dough around ... is not prohibited, right? The apple
dappy that comes straight from Devonshire is a truly traditional dessert with pastry is reminiscent of scones. Happy people of Devon!

The apple filling
4 beautiful apples, peeled and cut into small pieces
the juice of a lemon
3 tbsp sugar 30 g butter

Dough

250 g flour 3 tbsp sugar
1 tsp baking powder 1 tsp
baking food
60 g soft butter (not melted)
2 tbsp heavy cream
50 to 70 ml milk +

a little sugar for sprinkling
+ whipped cream to serve

Start by preparing the apples and cook over medium heat in a frying pan after adding the lemon juice, butter and sugar. Stop cooking when the fruit juice has evaporated and apples begin to become translucent. Cool.

Preheat oven to 180 ° C - heat ventilation.

Prepare the dough using a robot. Quickly mix the flour, sugar, baking powder, baking soda, butter and cream. Gradually add milk (it may need not use any) and stop the robot when the dough begins to form a ball. The result should be very soft but not sticky.

Spread the dough on a floured surface. You must obtain a rectangle of 30 x 20 cm on which you spread the apples. Roll the dough starting from a long side and cut into 7 pieces that will have you spacing them (they will swell during cooking) in a pan lined with parchment paper.

Sprinkle with sugar and bake until the dough has taken a golden brown (25-30 minutes).
Serve warm with whipped cream.
