European Top Sharking

Brit trip # 2 - Cornish fairings

For the rest of my trip Brit towards the Cornwall the happy home of Cornish fairings, south-west.
At home everything is perfect: spicy flavor, aroma of caramel color and beautiful red ... and in addition they are they are crunchy ...

For 40 Cornish fairings (from a recipe from Linda Collister)

200 g flour 2 teaspoons baking powder 1 tsp
of bicarbonate food
2 teaspoons c
ground ginger 1 teaspoon spice Gingerbread or " 4 spices "
80 g caster sugar
100 g cold butter cut into small pieces 6 tbsp
of
Golden syrup
Preheat oven to 180 ° C - heat ventilation.
Sift flour into a large bowl and add yeast, baking soda, spices and sugar. Stir in the butter pieces and work well with your fingers until you get a sandy texture. Finally add the golden syrup (yes, I know, sticking) and continue to knead (With hands, perfectly!). You should be able to form a dough (not too firm nor too soft).
Divide dough into 40 pieces, then roll into balls between the palms of your hands. Arrange on baking sheet covered with parchment paper. Although the space as you see, they will spread a lot. Cook for 5-7 minutes. Cookies must inflate and then crack. They are ready when they begin to brown. Do not leave the eye because they burn very quickly. Wait a few minutes before you handle cookies that will harden as it cools.
